Chef Lisa Wong, renowned for her innovative approach to Asian cuisine, brings expertise from her training in Hong Kong, Tokyo, and Vancouver. Her menu seamlessly blends Asian culinary traditions with Canadian ingredients, creating dishes that are both familiar and surprising. The kitchen employs traditional techniques like fermentation, preservation, and wok cooking alongside modern approaches such as molecular gastronomy, resulting in a dining experience that honors tradition while embracing innovation.

Diners can choose from sharing plates ideal for group dining or traditional course-by-course experiences. Standout dishes include miso-glazed black cod with local mushrooms and spruce tip emulsion, Szechuan-spiced elk tataki with mountain herb salad and preserved lemon, and bamboo steamed dumplings filled with foraged mountain vegetables and truffle. The restaurant's bar program features creative cocktails incorporating Asian spirits, local botanicals, and house-infused ingredients, alongside an impressive sake collection and natural wines.

Fusion offers both à la carte dining and a "Chef's Choice" option where Wong creates a personalised tasting menu for each table based on seasonal availability and diner preferences. A private dining room overlooking the lake accommodates groups of up to 16 guests, with special multi-course banquet menus available.
