The restaurant's interior features natural stone, custom woodwork by local artisans, and subtle lighting that shifts with the passing daylight, creating a sophisticated yet comfortable atmosphere.

Led by acclaimed Chef Thomas Anderson, formerly of three-Michelin-starred establishments in Copenhagen and New York, The Pinnacle celebrates the finest Canadian ingredients through contemporary preparations. Each dish tells a story of the region, from hand-foraged mushrooms to locally-raised game and line-caught Pacific seafood. Chef Anderson and his team maintain close relationships with local farmers, foragers, and producers, often visiting at dawn to select the freshest ingredients for the evening's service.

Our seasonally evolving tasting menu offers a journey through the Canadian landscape, with optional wine pairings from our award-winning cellar housing over 500 labels from around the world. Signature dishes include butter-poached Lake Louise trout with spruce tips and pickled fiddleheads, dry-aged bison with wild berry gastrique and roasted root vegetables, and wild mushroom risotto featuring fungi gathered from nearby mountain slopes. Each plate is artfully composed to balance flavour, texture, and visual appeal.

The Pinnacle offers both à la carte and tasting menu options, with vegetarian and plant-based versions available. Private dining experiences can be arranged in our intimate Chef's Table room, where up to eight guests enjoy a personalised menu with direct interaction with Chef Anderson and his team.
